Cold Brew Unicorn Bars

Make your own colorful, buzzy bites with our confetti Cold Brew Unicorn Bars made with Chameleon Cold-Brew Vanilla Coffee Concentrate.


  • 1 cup butter, room temperature
  • 1 cup cane sugar
  • 2 large eggs
  • 14 cup Chameleon Cold-Brew Vanilla Coffee Concentrate
  • 1 12 cups all-purpose flour
  • 1 tsp baking powder
  • 14 tsp sea salt
  • 12 cup rainbow sprinkles
  • more sprinkles and/​or marshmallows for topping
  • Frosting
  • 8 oz (1 cup) cream cheese
  • 8TBSP (1÷2 cup) butter
  • 4 – 6 cups powdered sugar
  • 1TBSP Chameleon Cold-Brew Vanilla Coffee Concentrate
  • 14 tsp sea salt
  • food coloring as desired


  1. Preheat oven to 350°F and line 9” x 9” pan with parchment.
  2. In a stand-mixer or with electric mixer, cream butter and sugar until light and fluffy.
  3. Mix in eggs and Chameleon Cold-Brew until smooth.
  4. Add flour, baking powder and salt and slowly mix until just combined.
  5. Stir in sprinkles by hand.
  6. Spread dough evenly into prepared pan and bake for 25 – 30 minutes until the edges are set.
  7. Remove from oven and let cool in pan.
  8. Meanwhile, in a stand-mixer or with electric mixer, cream butter and cream cheese until light and very fluffy.
  9. Add one cup of powdered sugar at a time until sugar is incorporated and frosting is whipped.
  10. Mix in Chameleon Cold-Brew, sea salt and food coloring until combined & your ideal color is reached.
  11. Pipe or spread the frosting onto cooled bars then top with more sprinkles and mini marshmallows.
